French 75s

We picked and peeled a few pounds of lemons for our next batch of limonchello, which should be ready in about 6 weeks. What to do with the lemon juice we didn't use? Make French 75s of course. Yum!

    1/2oz Lemon Juice
    2 Dashes Simple Syrup
    Shake together over ice, pour into champagne glass
    Top with 2oz Champagne
